80 days — This Italian heirloom first appeared in America in the early 1800s. 'Cannellini' beans can be used at the shell bean stage but are generally allowed to remain on the plants and harvested as a dry bean. 'Cannellini' is a main ingredient of minestrone (soup).
As a dried bean, it has a smooth texture and nutty flavor. It increases 2½ times when cooked (e.g. one cup dried beans equals 2½ cups cooked). Each packet contains one ounce, which is approximately 55 seeds.
