100 days β Also known as 'White Egg', this old variety originated in the mid-1800s. Although the pods are inedible and it can be used at the green shelling stage, it really shines when allowed to fully mature and is used as a dry bean.
The beans are larger than 'Navy' beans making them a good choice for baking. They puree nicely for soups and some say they have a bacon-like or meaty flavor.
There are five to six plump, white, egg-shaped seeds per pod on prolific half runner type plants. Harvest after about 100 days for dry use. Each packet contains one ounce, which is approximately 60 seeds.
